tasty baked chicken that's naturally gluten free

navigating the gluten free diet can be a pain sometimes when trying to find substitutes for gluten containing foods. one way to get around this is to simply make a meal that doesn't require any substituting at all. here is my recipe for an easy and delicious baked chicken dinner that your family will love.





ingredients
organic bone-in chicken breasts (skin-on too)
organic jewel yams
1 medium organic yellow onion
1 medium organic tomato
fresh oregano
salt, pepper, cumin, and dried oregano
1 tsp olive oil

preparation
rub the olive oil over the bottom of a medium-sized roasting pan
slice the onion into 1/2 inch rings and place on the bottom of the pan
place the chicken breasts (bone in and skin on) on top of the onion rings
peel and cut the yams into wedges and place around the chicken
generously sprinkle the dried oregano and cumin over the chicken
sprinkle salt and pepper over everything, quantity to taste
(you can also rub these spices under the chicken skin, but it's not necessary, keep it simple)
slice the tomato and place the slices on top of the chicken
wash the fresh oregano, dry it with a towel, and chop, then sprinkle over chicken and yams

cooking
I set my oven to 350 degrees, convection bake
place the pan in the oven uncovered and cook until the chicken is not pink inside but still juicy
in my oven this takes about 1 hour
after cooking for 45 minutes, I periodically scrape and pour the drippings over the chicken

serving
serve with your choice of brown rice, white rice, or quinoa.
