gluten free pizza at the wallflower on main street

Robyn and I have been looking forward to writing about the Wallflower Modern Diner for quite some time now. a few of you first told us about Wallflower and their gluten free menu alternatives, such as gluten free buns for burgers and eggs benny. we had even been told that the poutine is gluten free! we hadn't heard about this new Main Street business which took over the former location of the Aurora Bistro, and were excited to try it out. 

unfortunately, despite the fact that the website touts this diner as being Celiac friendly, we were not too impressed on our first visit. the waitress was not knowledgeable about which items were safe for Celiacs, the bun substitute for the eggs benny was the same bun substitute for the burger, ie big and fluffy, not at all like an english muffin. the poutine is definitely NOT gluten free (we knew this was too good to be true). at the end of the meal, we gave our feedback to the owner Lisa, who was extremely open to our comments and suggestions.

this is where the story about the Wallflower turns around for the better. Lisa expressed her regret at our less than satisfactory experience, and asked us to give her a hand on some of her kitchen procedures to minimize cross contamination, to suggest alternative gluten free bread options, and to review her upcoming revamp of the menu. that's right, Lisa is dedicated to ensuring all her guests can enjoy the Wallflower experience equally, hence she is currently working on a specific gluten free menu, as well as a vegan menu. we've had a sneak peak and we are thrilled to announce that there are many gluten free options available, including pizza!

in fact Lisa hosted a gluten free pizza tasting night tonight in order to get feedback on her new recipe before launching it to the public. it is her intention to offer gluten free pizza every tuesday. every monday the kitchen will be cleaned top to bottom in order to minimize cross contamination, and tuesdays the kitchen will become a gluten free zone for pizza making. another one of Lisa's recent changes to help minimize the possibility of cross contamination has been to remove all gluten containing flours from the kitchen to another area for storage. further to our initial feedback, when we realized the hash browns were being deep fried in the same deep fryer as other breaded items, Lisa has purchased a new oven where she will roast all of the gluten free hash browns!

the Wallflower Modern Diner serves "good old fashioned home cooking" and serves brunch every day. the atmosphere here tonight was cozy, just like we were eating at Lisa's home, and I think that's the point. Lisa will go out of her way to make sure you enjoy your food, the experience, and that you have a safe environment in which to sit back and relax.

After reading this post I was excited to check out the efforts the owners of Wallflower have made to go all-out on their gluten free options. I emailed Lisa to get some more details and she was very receptive and excited. She mentioned that Tuesday is now Pizza day and that it would be a great opportunity for me to check out the GF crust offering. So I headed down last night and had a very pleasant experience. After Lisa came over and chatted about the pizza crust ingredients and their dedicated oven I felt very confident. And I wasn't disappointed. I indulged in a Goat Cheese, Spinach and Tomato pizza that had a very pleasing, crunchy, yet moist thin crust. The balanced mixture of buckwheat and tapioca flower is great and has no mysterious gluten-free-esque after taste. It sounds like the staff is working on revamping the menu further to include more options. I will definitely be checking back in to the Wallflower Modern Diner to sample more gluten free treats. Thanks for the post!
