gluten free mom: saving time at mealtime

the life style change for someone with Celiac Disease, like me, can be very difficult to manage with our busy lives. making sure my food is 100% gluten free all the time is also very time consuming, since I am cooking my own food about 95% of the time. eating out gluten free is challenging, and what I've also recently discovered is that eating out with an eighteen-month old is also very challenging for other reasons, which fellow parents can relate to. I thought I would share with you some of my time saving ideas to help minimize your time in the kitchen and help you spend more time with your family. 

the first is something we wrote about in a previous post, Happy Planet soups and sauces. my favorite dinner of the moment is sauteed chicken with Happy Planet's Indian Butter Chicken Sauce on rice served with salad or raw veggies. this dinner is seriously so easy yet it tastes like you cooked it from scratch. all the sauces, except for the French Mushroom Wine sauce are gluten free. they are all preservative free and trans fat free. some are vegetarian, and some are dairy free. 

to cook I use specialty skinless boneless chicken breasts which I buy at Choices. I cut the chicken into small strips, throw into a frying pan and sautee until all pieces are almost cooked through, then I add the sauce and cook for a few more minutes. this is all you need to do, however since my husband doesn't like spicy food, although I wouldn't consider this sauce spicy, I add a few spoonfuls of plain organic yogurt, and let it cook for another minute or two. and voila, an exotic and healthy dinner in less than ten minutes, and minimal mess to clean up! to save yourself even more time, order Happy Plantet soups and sauces through Small Potatoes Urban Delivery

the next gluten free time saver is so good, I can't believe I hadn't tried it until now! a few weeks ago Robyn wrote a post about the Rocky Mountain Faltbread Co. that makes gluten free pizza. Robyn now stops here on her way home from work to pick up a pizza to go quite regularly, and she always calls me to tell me, "it's so good I can't believe it's gluten free. I keep waiting to feel sick but I never do"! she told me that the restaurant has an environmentally friendly children's play area complete with a mini kitchen where kids can wear aprons and chef hats. my husband and I took our daughter to the Kitsilano location the other night for dinner, and we were so impressed. he ordered a regular pizza, as in it's not gluten free, and I ordered a gluten free crust with mine. when the pizzas came, they looked identical, and of course my husband could try both, and he didn't notice any difference. while we munched away on our thin crust pizzas complete with fresh and local ingredients, we could comfortably watch our daughter play just a few steps away. the restaurant has at least a dozen high chairs available, and the children's menu comes with crayons for coloring. the staff were also very friendly, and didn't seem to mind little people running all over the place, truly a haven for busy parents! I left completely satisfied!

Hi Trish, yes this place is seriously a god-send! I tried it again recently with my whole family, and it was a huge success. The pizza was just as good the second time, we all devoured it.
