be my valentine: gluten free toll house cookies

Valentine's Day is just around the corner therefore Robyn and I will be dedicating several posts on how to enjoy this romantic occasion, gluten free of course! first up, gluten free toll house chocolate chip cookies. I made these cookies today, and I seriously cannot stop eating them. I wanted to take a picture of all of the cookies, but I ate them too fast. oh well. hopefully if any of you are still on your new year's resolution diets, you can work out a few extra hours to compensate for this indulgence. seriously, why is valentine's day so soon after new year's again? I cannot fathom how many people fall off the wagon at this time! 

to make these cookies I used this recipe and adapted it slightly to make it gluten free. here is what I substituted/ changed from the original recipe:

all-purpose flour ... gluten free flour
butter ... unsalted butter 
granulated sugar ... organic evaporated cane juice granules
Nestlé Toll House semi-sweet chocolate chips ... Enjoy Life semi-sweet chocolate chips

otherwise, I followed the recipe to the letter. It recommends nine to eleven minutes baking time, mine turned out perfectly baking for eleven minutes. I was able to make approximately 36 cookies.

let me explain the substitutions in greater detail. 

the all purpose flour can be substituted with any brand of white or brown rice flour, Bob's Red Mill is a good option. however I used a blended gluten free flour mix that I found on Cate's blog, Searching for Panaluu. I originally made this flour last year when I was testing (and failing) cupcake recipes. the recipe yields quite a lot, so you'll have enough for several baking endeavors. 

next, I always use organic butter as it doesn't contain a color additive. why butter needs color is beyond me. try Avalon Dairy's organic unsalted butter, they are local too.

certainly use granulated sugar if that's what is in your pantry. I was grocery shopping and couldn't find the organic sugar I normally buy, so I decided to try evaporated cane juice, and it worked well. it's less processed than refined sugar, which is a good thing. 

the Enjoy Life brand chocolate chips are not only gluten free, but they are also dairy and soy free. you can download a fifty-five cent coupon for any of the Enjoy Life products here, which complements the coupon book we mentioned in a previous post about saving money on gluten free products. the coupon is only valid in Canada and the US. for a list of where to buy Enjoy Life products, look here.
